Zoup! Opens First Smaller Footprint Eatery

Hope and Jim Fossesca opened Zoup!’s first smaller footprint eatery on June 21st in Boardman, Ohio. The new eatery, although more compact, has the capacity to serve the same amount of guests, with an improved in-store process that caters to the rising demand of delivery and takeout orders.

Catering to the ‘modern’ consumer

A shift in consumer behaviors, accelerated by the pandemic, has spiked an increase in off-premise dining. More and more consumers are ordering food online for takeout or delivery, rather than dining in restaurants. The new smaller footprint model eatery is an efficient way to meet the change in consumer behaviors.

“The need for large dining areas is giving way to speed, convenience, and contactless interactions,” says Zoup!’s Director of New Restaurant Development, Robert Kirma. The new smaller footprint was designed to allow Zoup! Eatery franchise owners the ability to operate in restaurants in the 1,300 to 1,600 square foot range. At 1,474 square feet, Hope and Jim’s restaurant can still seat 29 guests. Although smaller than a typical Zoup!, the new smaller footprint eatery has the capacity to serve the same number of customers, with an improved in-store process that caters to the rising demand of delivery and takeout orders the restaurant industry has seen since the beginning of the pandemic.

Adjustments were made to enhance customer’s experience for both ordering and dining in. “Improvements included the addition of pick-up and carry out areas customers are now looking for. The soup sampling Zoup! is known for is still offered, but with a more efficient design the ordering line is smoother and we see an increase in speed and reduction in bottlenecks. The kitchen area is also smaller and more efficient,” shares Kirma.

Smaller footprint, big profit

To someone interested in owning a Zoup! Eatery, a smaller footprint option means reduced construction costs, lower utilities charges, and lower overall rent. “Ideal locations for Zoup! are near retail, residential, and the white-collar daytime office population. There is always competition looking for spaces in that demographic, but the smaller size combined with Zoup!’s in-house construction team gives our owners an advantage. Our team can make almost any space work,” Shares Zoup!’s Director of Franchise Development, Richard Zimmer.

It’s first week, Zoup! Boardman set record sales and throughput numbers in-store and off-premise. With its continual success comes additional sales in catering and third-party delivery services such as Doordash and Ubereats.
